how come for professions if u have a hero grandmaster whatever it says 50%speed but an original 15 min quest only goes down to 10 mins not 71/2?

Because it doesn't use math. It uses Cryptic Math. It is a strange and wonderful thing.

If you have 100% speed increase, you can do twice as many tasks in the same amount of time. It doesn't make the tasks instant.
50% speed increase on a 15 minute task is 15/1.5 = 10 minutes. You can do 150% as many tasks in the same amount of time.

To elaborate: "% increase in Speed" and "% reduction in Time Taken" are different. Remember that Distance (or Distance-analogue) = Speed times Time. Therefore, an X% increase in Speed results in a [X/(1+X/100)]% reduction in Time Taken.

Think of it as a trip. At 100 km/hr it takes an hour to go 100 km, at 200 km/hr it takes half an hour. Double the speed, half the time.
