Alchemist

Can't seem to find the Alchemy option in my Professions menu?

Is it only in limited servers? (I'm on Dragon)

Or do I need to be a specific craft level??

    As far as I'm aware its a "To Be released in the future" profession. Probably release day or ranger release day.

    Neverwinter will be live in just two days on June 20, 2013! Along with the release of new end-game PvP and PvE content, Gauntlgrym, we're also introducing a new profession for adventurers to master: Alchemy.

    From the news section on Home page...

    If you want to have a quick look at it before then, you can hop on to the preview shard. Information on how to do so is available in the preview shard forum at the bottom of the main forum listing.
