How do you reset skins?

Hi
My quest (in the sig below) Amulet of the Shining Sun utilises a mechanic which allows you to choose the mobs you fight.
Currently, there is a bug that reskins all my mobs to Frost Goblins. I do not know how this happened but everytime I change them back to their appropriate skin and save and publish, it defaults back to Frost Goblins! Anyone know a way around this or a way to reset them back to their original skin?

Have you tried deleting the encounters?
