There was one fight vs a Goblin king boss, who would run around and try to get you to follow him into traps... that was pretty cool. Most other fights are what you described - avoiding AoEs and/or dealing w/ lots of adds...
It'd be nice f they incorporated some environmental elements - like luring the boss into a shaft of sunlight to weaken them, or into some mud to slow them, etc.

Yeah, I personally would love to see some more unique boss fights and some end game content. That seems to be the biggest thing that the game is missing at the moment 10 man raiding content with unique bosses that present greater challenges then T2 dungeons and have unique ability's that will allow the players to feel truly accomplished when they beat these bosses!
It's easy to create engaging boss fights. Will mmos ever create them, probably not. Most boss fights ends up as dps going all out. Tanks tanking, healers healing.
They can make a simple boss fight like this.
Vampire boss, in cave. Hit cannon switches destroying part of the cave, letting in sunlight. If the vampire stays within the light it get weakened. Then it summons bat minions to block the light.
Would like to see more environmental involvement in battles.
