So you can't cheat the system, but you can give your pet nice purple items and they will scale to whatever his current level is, as well as continue to grow with your pet.
oh alright So i can buy him lvl 80 rings in advance and let him equip it and the stats will just scale until it reaches it's maximum stat when i am lvl 80? cool im too lazy to to change it from time to time anyway

Unless this was changed since launch, this is not what I've seen.
Somewhere around my pet's level 5 or so (and my like level 10 or so), I put on a level 42 item. According to the stat screen, my Dire Wolf got 100% of the stats from the item. And from the mod slotted in as well.
Of course, I have no idea if said items are working (Power does not increase his tooltip damage, and Recovery doesn't decrease the recharge time on the tooltip), but he always got 100% of the listed bonus no matter his level (or the level of the item).
