I was hoping some folks who are a bit more knowledgeable about the way different stats work could help me out.
Where should my stat priorities be for tanking? It seems like AC,Defense are big for damage reduction but deflection and regeneration are also defensive stats I see on items. How much better would they have to be to become worth sacrificing defense for?

I've been curious about this as well.
I don't crunch numbers but instinct tells me to focus on defense since its a constant resistance and doesn't rely on a percentage chance of being effective as deflection does, though deflection is my secondary focus.
I'm experimenting with recovery and regen ATM to see what's more beneficial to me. I'm currently focusing on recovery third. Though regen is always good I like to think pots and DC's should be able to pick up the slack so I can focus on keeping aggro (since recovery shaves off the CD's on those powers).
I'm interested to see what others think tho.

AC seems to be the hardest stat to get and it's on the Shield and actual Armor (chest) of a suit of gear.
Defense is your standard flat damage reduction.
Deflection is like block in other games, it reduces the amount of damage you take from a hit. It has a little sideways arrow icon when you take damage.
Regeneration is just that, you regenerate a small amount of hit points. I was getting something like 1 for 48 regeneration and it wasn't very impressive when I had 8000 HP.
Recovery reduces the cool downs on abilities and increases how fast you gain Action Points to use more dailies.
Personally I've been going for a mix of AC, Defense, Deflection and Power. That gives me a good amount of defenses while also giving me damage for threat.
I've been playing around with my GF's stats for a bit. I'm only level 30 on him but I started out pugging instances with just about everything on defenses. I found I couldn't hold aggro very well, which I was expecting but I was curious so I gave it a whirl.
Next I changed out my neck and belt and gloves for pure 'DPS' pieces. Now, when I'm quick to use tab to mark the majority of the mobs, being doubly sure to mark the tougher ones, I can hold aggro much, much better. A cleric in my guild, and a guy I've played other games with, told me via Teamspeak that it was the first time he'd run that dungeon that he didn't have to use at least 20 heal pots because the tank couldn't keep aggro off of him.
So I've definitely seen my best results from mixing defensive and offensive gear. I have 10.5k hps now and can keep aggro much better. I'm going to switch out both rings to DPS gear next though. I think that'll put me at 50/50 on Tanking/DPS gear. I'll run like that for awhile and see how it goes, but I'm fairly certain that's where I'll stay. If it does make me too squishy, I'll go 1 tank ring and 1 dps ring instead.

Derp. I didn't even know that a GF's offensive capabilities factored into holding aggro.
Guess I should be proud that I was able to maintain it through the ogre/bandit skirmishes and the Cloak tower. Lol
I'll try your method though cuz I have noticed that ill taunt and a few seconds later mobs will run off and I have to do it again.
