For those who have used one of these, what specifically does it allow you to change? Just hair and tattoos or can you go deeper and change colours and body shape as well?

When you use the Alteration token, you can change your entire appearance, but not race or gender.

Does it include origins and god?

No it does not.

Is there any way to change origins, or maby it's in plans ? Cuz i'd really carelessly picked my "lore" stuff.

There is no way to do this yet, no.

If you really want to change it, you'll be forced to re-roll. Make sure to get rid of all your astral diamonds if you do: you can send them to your account by posting them for sale and then immediately canceling the posting. This will leave them in your account until you reclaim them on another character.
