Where Have All The Mimics Gone

I'm someone who open treasure chests. Yes, the loot is junk, but for some reason I keep hoping. Anyway, I was doing an adventure the other day and I came across a mimic. This got me thinking. Aside from LoMM and MSP, I can't remember finding a mimic in the wild.
Can we get mimics again?
Can they really challenge a player and drop decent loot?
