Professions aren't really connected to your class. It depends what you want to make down the track and what you want to do with those things as to what professions you choose, and these decisions can relate to all classes equally. If you want to make healing potions for instance and sell them on the Auction House do alchemy. If you want to make gear reinforcement kits and sell those on the AH do jewelcrafting, amorsmithing or blackmsithing. For weapons I think it's artificing. For the Stronghold rugs which sell for millions (and never many of them), if you ever get your profession to that level (masterworking) it's tailoring. It really depends on what you want to make and sell later to boost your AD income, and has little to nothing to do with what class you play.

I usually start with alchemy fwiw. I can gather and make all my things myself without needing to look to other professions or the AH to find ingredients/components. But if you have several characters you can do different professions and make things you need on each character. I have quite a few characters who I made just for professions and nothing else.
Apparently pointing-out the bleeding obvious is a 'personal attack'.
