Professions - Gathering at 70 but...

So I have resigned to the fact that the leadership that I worked to get to 25 was gutted with a big HAMSTER you (OK, maybe I am still bitter) but...
Why do I need to raise another profession on that toon to maximize my gathering? Why is the building level, and therefore my depots box size, not tied to my gathering? Why can't I turn in some high level raw materials to fulfill the building level quests? Instead I now have to raise some arbitrary profession just to do some quest to get my depost boxes bigger.
I have other toons that have other professions so maybe I will see if the ones past LV 2 can be done on them. But this is just another HAMSTER you to people who only leveled leadership.... you know, playing the game like you built it but now just getting screwed and screwed and screwed because we did not read the devs minds on how we were suppose to be playing the game.
