I went through it pretty easily using a single target focus of Flourish, Restoring Strike, and Takedown. I found WMS and Slam was enough while solo'ing for AOE, though sometimes I switch out Takedown for Roar for the quick determination to get into Unstoppable quicker.

If you aren't at the start or end of the bracket with any class, then you are affected by this bug. Doesn't matter what class, it's a scaling bug. That's why some people feel okay, and some do not at different times. Or it just scales horribly in the mid range I should say, it might not even be a bug.

Everyone has the option to get a mount with time/money, so I do not find it a big deal. However, I wouldn't mind them disabling them in pvp for the sake of balance, even though I have a fast mount. Not having mounts would go along way to giving the mobility classes a role to play, instead of everyone being able to do it.

I usually wait the first couple of drops to get a feel for how my party is going to be in these regards. If they start needing constantly, so will I, or I will never see a single drop. However, my usual routine is need a few here, greed a few there, and pass on stuff that can be used by another class in the party.
Human and Half Orc seem to be the best choices from a min/max perspective for GWF. Also, they can be semi tanky if built for it and do massive aoe/add control late game and can easily top damage. Just look around for some videos.
