No, it doesn't automatically go to Gold subscribers. You have to purchase a Lifetime Sub to get all the Veteran Rewards up front. To get the 1,000 Day ship as a Gold you'll have to pay considerably more and it will actually take 1,000 days.

You wouldn't be cheated. When you hit 1,000 days being a paid subscriber you too would have access to the ship. That's why it was called a "Veteran's Reward" - to reward players who have been supporting the game financially through subscriptions for that long.
Basically, this really seems like a "Oh no, Star Wars Old Republic is going F2P...WE'RE DOOMED so let's make as much money in one go as we can" sort of moment. TOR is a much better game so that most likely will really happen.
