No BOFFs in bridge mode? Is this right, is this a thing? I spent good money on a special bridge and I cant see my own bridge officers on it? Especially on the most famous bridge ever?

Nope, I buyer can't make a difference ... and neither can ten.
They look at development, support, and marketing costs vs. sales, and compare that to other products like lock box ships. Ships win, and those of us wanting better interiors lose.

They've more or less painted themselves into a corner with the interiors. There are too many of them to actually do anything of interest with them, because they'd have to work on all those maps at once. And because you can't do anything in them but look at the walls, most players are not interested in buying interiors.
They would have to scrap them all to build a more flexible system in their place. But that's something I wouldn't expect to be well received by the people who paid money for the current ones.
I know that I dont speak for everyone, but personally, I'd have no issue with scraping all of them, even the ones that I paid for, if a better system was put in place.

Works fine for me. You have to make sure all bridge officer station, away team and department head are assigned.
The interior of the ship other than the bridge, they are sitting half way through the floor. Cryptic still has not fix it.
You need to have 2 tac, 2 eng and 2 sci to have all the bridge officer template filled.

In my experience with bridges, the very first time you create a character the game seems to assign some random NPC's to your bridge. I remember one of my characters had pigmen also, I were stuck with them no matter what I did. When I made my current character I got a bunch of Bajoran's with red hair.... Lots of em'.
But they are there with any bridge I use, just like earlier I had pigmen. Another character had green aliens.... That was weird.
But my bridge officers also spawn on the bridge, sometimes they do not. Jumping on and off the bridge usually resolves it.
Ok, just looked at the 2267 Constitution bridge and it looks like it has slots for 6 Boffs, but the variables aren't getting loaded. If you look at the NPC names they're called "Template Bridge Officer". This isn't what the game does when it fails to load boffs. If it had tried loading them and failed it'd say something like "Starfleet science officer".
For comparison on the Eaves bridge, I was able to see all of the Boffs assigned to bridge stations and my away team, with a random "Tactical officer", Science officer" and "engineer officer" tossed in to fill the empty seats. That gives a grand total of 12 NPCs seated on that bridge. Actual boff placement is kinda random but there's 4 each of tac/eng/sci boff seats. One interesting anomaly was that it once pulled T'Met(a tutorial Boff who wasn't in use) to fill a slot when I only had 1 science Boff slotted between my bridge stations and ground team.
Clearing ALL of the stations resulted in it pulling Tarsi and Skavrin(Tutorial boffs), and filling the other 10 slots with randoms.

I assume you mean the Constitution 2267 bridge. Let me guess, for those that it doesn't work you have a 23rd Century Starfleet Captain, while for those that it does work for, you have a regular Starfleet or Discovery Starfleet Captain, right?
It's a bug with this bridge that's been around since at least Summer of 2018 (if not earlier, but I didn't have the bridge before). The bug applies to any 23rd Century Starfleet (TOS) Captains, no matter whether you're still in the 23rd Century tutorial or already migrated into the 25th Century (BOFF type doesn't matter). If you have a regular Starfleet (25th Century) or Discovery Starfleet Captain, the BOFFs will show up normally on the Constitution 2267 bridge.
The bug is probably related to the fact that for 23rd Century Starfleet Captains, the placeholder NPC bridge Officers are all labelled as "Template Bridge Officer" while for 25th Century Starfleet Captains, they are labelled Tactical, Science and Engineering Bridge officers (as is the case on other bridges for 23rd Century Starfleet Captains).
The bug appears to be specific to the Constitution 2267 bridge, Bridge Officers appear fine for 23rd Century Starfleet Captains on any other bridges I have access to.
It's a shame that they still haven't fixed it, even after multiple reports, especially since this is an expensive, C-Store exclusive item (one would think that they would give those a priority at least, so people wouldn't be buying defective products, but no). I believe it's 100% reproducible if you have a 23rd Century Starfleet Captain, too.
It's especially annoying since it's a 23rd Century bridge that is meant mainly for 23rd Century Captains, yet it's the only type of Captain it doesn't work for. It ruins my immersion not to have my Bridge officers that I have spent many hours each to design in the Tailor with don't show up at their stations on the bridge.
I wonder if it's possible to mod the game files so that the regular Starfleet version of the 2267 bridge is loaded for 23rd Century Starfleet Captains as well (replace one set of bridge files with the other, for example?). If the devs refuse to fix it, perhaps it's time that modders do...
I think it's only the combination of TOS character and 2267 bridge that does this. I tried the Eaves bridge on my TOS guy and it worked fine, as did the timeship bridge. So not all bridges do this to TOS characters.
I tried the 2267 bridge on a Romulan(because why not?) and it populated all six bridge stations. Heck it even used similar logic to the way the Warbird bridge works in that it populated the tutorial boffs first then filled in the leftover slots. (which makes me think that logic isn't specific to the Warbird bridge and is a general Romulan thing)
