(Seriously, Foundry folks living around the Wisconsin, Illinois, Indiana area are trying to get a get-together going and if Cryptic had a presence at something in the area [even if it was only sending Zero/Kael/Taco/Anyone out for a day around Chicago] it would make for a great community event.)

I'm ~1300 miles from Las Vegas or San Diego. So yeah, it'd be nice if some of the bigger conventions would rotate around the country each year so everyone is 'close' to it every 4-5 yrs.

The conventions aren't going to "rotate". There is no incentive in that. Once in a great while a convention may change locations (Gencon moving from Geneva Wisconsin to Indianapolis, for example), but that is usually a one-and-done type of thing. If it doesn't stick then the con isn't likely to stick around, either.
But someone can start a con in another town, though.
It may not be a large con and may not draw enough people to support dozens of guests of whatever status, but they have to start somewhere and it may be able to grow into a bigger con or even settle in to a level where they can offer up a handful of stars of whatever status for whatever it is that they are focusing on.
Huntsville Alabama has a few cons every year, and it may be a growing area but it's not a major population center like Atlanta or Nashville.
They have a couple of general comic book conventions and a Dr. Who convention every year, and when Star Trek was celebrating their 30th anniversary, Huntsville hosted that as well (I still have a t-shirt I was given for helping a major sponsor and a souvenir cup from an overpriced soft drink).
If Huntsville can have that then there are many other cities and towns that could support a con of their own if someone would step up and make it happen.
I'm not saying that it is easy to do, but it can be done.
