It doesn't address hominid but nonhumanoid races like Gorn or Tellarites - that might just be convergent evolution.

Unfortunately, you can't do much against that as it's a combination of "rule of fun", budget and "uncanny valley".
An alien that isn't humanoid enough or doesn't have a familiar body or face shape will both make the viewers uneasy and explode the budget in special effects. Sometimes, it's possible and it works, but far from always.
Plus, since you can't predict what evolution will produce on a different planet with different everything, you can only go with "look, let's not brainstorm for months and pay highly-regarded scientists to try and make something that could be realistic but viewers may not like, and let's take a cat/lizard/oyster/sculpture/trilobite/phallic symbol and make a species based on this" as the less complicated way.
In addition, even if they managed to make a realistic alien, there'd be the problem of differences with environment, language, mindset, culture, technology, flora, fauna, etc. So we'd be stuck with inintelligible aliens in various environmental suits talking about things we have no reference or counterpart to. Not fun to watch for a whole series.

There have already been instances where genetically engineered herbicide resistance got passed from GMO plants to wild plants by viruses. Nature will do what nature does. All plants will grow unless something kills them.

Personally, I always felt Gorns were asexual, like the Nameks from Dragon Ball.
Secondary materials have always implied that Gorn do indeed come in male and female varieties, but that the dimorphism between their genders is subtle. Or at the very least, not analogous to what you'd see in mammalian-descended bipeds.
