Some people do not like the word "toon" when referring to a characters. Others do not like the term "roll" a new character, as you are not actually rolling anything to make a new character. In the grand scheme of things it is just a short-hand word that has become part of the gaming linguistic cycle.
STO is about my Liberated Borg Federation Captain with his Breen 1st Officer, Jem'Hadar Tactical Officer, Liberated Borg Engineering Officer, Android Ops Officer, Photonic Science Officer, Gorn Science Officer, and Reman Medical Officer jumping into their Jem'Hadar Carrier and flying off to do missions for the new Romulan Empire. But for some players allowing a T5 Connie to be used breaks the canon in the game.

I don't even know what critters are supposed to be. NPC's? I know what pets are, of course (I'm not a complete moonbrain ). But 'critters'? I think I saw a dev use the word today, actually.
Critter is a word that they use for their own internal development. I've seen other devs on other games use the same word, so it's not just a Cryptic thing either. It seems to be just a general dev term. Nothing to get all upset about.
Game dev term for creature, could be all like a person, pet, npc, etc A 'living' creature in game.

My Grandma use to call anything that dug up her garden a "critter".
It was usually preceded by the word "Damn".

In addition, terms like toon trivialize the importance of our avatars as being characters that are part of a long tale of exploration in the Star Trek Universe. Even if by toon they mean character, toon carries certain connotations to it that make it inappropriate for properly describing what our characters are.

Wrong! Contrary to what people often think, despite being a contraction of 'you all,' "y'all" is singular. "All y'all" is plural.

I agree with you whole-heartedly. I know a lot of players have been in on MMOs for years and have developed their own terminology for things. I get it, but when the game itself has its own vocabulary, I think maybe that is what should be used.
For other players like myself who had to learn the lingo, relative to STO, here is what I have learned:
Aggro - threat; how much an NPC will want to attack you (or another player)
Alt - alternate character; not the character you primarily play as or devote your time/resources on
Class - career; Science, Tactical, or Engineering captain career
Critter - NPC; non-playable character, or an AI-controlled enemy that will attack you
Farm - performing a mission over and over for the same reward; can also mean doing different missions that grant the same reward
GCD - group cooldown, or global cooldown; cooldown timer on abilities that are the same or in the same "group" as other abilities which have just been activated. Also refers to the mandatory time between torpedo launches (any launch or launches in the same group).
Gear - equipment; anything that is equippable on your captain or your ship
Loot - mission rewards; usually refers to equipment or devices, anything that goes in inventory
Mob - see critter; maybe also be a group of them
Nerf - to make an item or ability weaker
Pet - also pet in STO, but poor term for space; ship separation, summoned allies, or hangar fighers/frigates. I get why they are called pets on the ground, but I think it takes a perverted captain to think of his fleet of shuttles as personal "pets". Probably the same type of captain who thinks of a pet Sehla cat as an Admiral named Bobo.
PUG - pick-up-group; running an STF or similar missions using the public queue instead of a pre-made team. Despised by some players, but the only source of teaming for others. To complete an Elite mission as a PUG is rare and one of the highest challenges STO has to offer.
Quest - mission
Raid - STF or other PVE queue mission requiring a team of players to complete
RP - roleplaying; keeping completely in-character while in game, even when discussing the game itself; taking this to extremes will attract the attention of Starfleet's finest oral health professionals (don't ask), especially with respect to ERP (REALLY don't ask) .
Spam - anything you activate that either calls a "pet" or adds visual graphics to the screen. A pejorative term, since it can cause graphical hiccups or lag, especially in PVP
Spell - ability; instead of "casting a spell" in STO, we activate abilities
Toon - character; In STO these are called characters or captains.
XP(experience) - skill points; may also refer to expertise or specialization points. But mostly they refer to skill points required to reach next level
