I'm pretty sure I saw a Mirror Odyssey with hull number 1701-F in an MI cutscene earlier. Extra odd because a) Mirror skin, obvs and b) it was ISS Spock, which wouldn't have a 1701 number because that's the Enterprise in the Mirror Universe too.

I am more interested in why the Enterprise-C has all Purple MK XII gear when they were refused a modern retrofit. (Except for the Warp Engine, of course, which is still common White). The Enterprises are all messed up.

Starfleet special issue. Next to being unable to loose the Enterprise, you need to take a look at the Captain.
Why did Shon get the Enterprise again? Ow, right. He got the Belfast blown to bits and pieces. Even when the Sisko got the Defiant killed, they gave him another, not a brand-new Sovereign class.
So Starfleet's Corps of Engineers already knew that the Captain would not be the best. So they gave him a huge amount of hull.
Only person worse is Obisek: Reman Leader, looses Craters --> Rebellion Leader, looses ice planet base --> Reman Leader, Vault is nearly abducted --> Starbase captain, Vauthill Station is under attack. Whichever base he commands, deatn and destruction is sure to follow.
Clearly the Enterprise E is still intact some where because it's too young to retire and has not been known to have been destroyed. Until the former or the latter happens, there can't be another Enterprise.
