Alrighty so, I've been thinking - My Jem'hadar Dreadnought Carrier is pretty darn effective in PVE as it is right now (I don't PVP so don't worry about that) - but I feel like my torpedoes are... frankly useless.
Right now I've got Transphasic Mk XII Very Rares - I grant being Transphasic is part of the problem; but instead of shelling out for Mk XII Very Rare Quantums, I'm considering instead replacing them with Phaser Dual Heavy Cannons. See, right now my JHDC runs like this:
I don't really have a problem keeping on target with my carrier, despite it's size/low turn rate, and things die plenty fast so it's not something that desperately needs to change in order to make the ship functional - it's already quite powerful; but I'm seriously considering dropping the torps for Dual Heavy Cannons or maybe a beam so I can replace Torpedo High Yield III with Beam Overload III or Fire at Will III.
I figure before I do that I ought to just ask the forums though - is there a compelling reason to use Torpedoes in place of cannons in this set up? Or am I better off dropping them, redoing my skills and focusing on pure energy damage?

Sometimes I drop all energy weapons except the KCB and use:
1x Bio Neural torp, 1x Breen Cluster Torp, 1x Harpeng, 1x Romulan Plasma Fore
2x Transphasic mines, 1x KCB Aft
I also have 3x projectile doffs.
Either way, I have lots of torpedoes, and things die pretty easily in elite STFs.
Besides, everyone does beams, and that's kinda boring :-/
If I were you, I'd switch to Photons or Rom Plasma and Omega.
I like a dual beam bank up front on mine, so I can use Beam Overload / Subsystem Targeting / etc. Also want to second the suggestion of using the Romulan or Omega torpedo.
(I actually prefer 3 DBB / Rom torp because I like to keep my distance a bit in mine, but if I were using DHCs, I'd go 1 DBB / 2 DHC / Rom torp.)
Definitely lose the transphasic. I've never had much luck with them outside of pure transphasic torpedo boats, and the Jem Dread is the wrong ship for that discussion.
I'd forgotten about the Borg and Romulan torpedoes; I'm not sure how far I am from either; will have to look. That may well be what I do - Borg particularly since I've already got the console and cutting beam.

4 fore energy weapons, particularly DHC and DBB mix, are hard to power unless you've got something that mitigates the drain reliably, like Marion with DEM, the Comm Array command for energy weapons, or a Eng captain with Nadion Inversion (use before firing off a BO) and EPS Manifold Efficiency Trait (to stack more power on all system on every EPt ability).
I use an Omega Torp on mine, along with 2x DHC and one DBB for subsystem targeting if I'm running Polaron with 2x turrets and the cutting beam aft, or if I'm running Anti-proton, 3x DHC and Omega torp fore with 2x turrets and the new 360 degree beam array for subsystem targeting (Cutting Beam dropped, as the Omega torp can complete the two-piece bonus).
My best three reasons why to run with torpedo(s)
#1: You want to. (I do)
#2: When it comes to energy weapons, over 6x cannons/beams REALLY start to drain. Torpedoes do 100% of their damage no matter what energy level you are(fresh out of full impulse) and don't compete for power with beams/cannons.
#3: You have the "best" torpedoes. For me, that's Rom/Omega, Wide Angle Quantum Launcher, or Breen cluster transphasic. There are a few others, but the "best" is what you make of it by the way of skills, powers, consoles, and tactics.
As far as other star trek games go, the rate of fire you get with torps in this game is unreal.
For transphasic torpedoes, go with the breen cluster: it is free from mission, doesn't require High yield or torp spread to make it dangerous, and does fantastic damage. However, you need to address the rate of fire with Doffs and/or another torp, deal with the projectile being vulnerable to being destroyed, and give it at least one console or adapted Omega set bonus to boost it's damage.
Quantum torps with torpedo spread will never miss, and will only be stopped by shields.
If you want constant damage, the Rom/Omega launchers will fill the sky with torpedos.
If you want burst, Quantum(with torp spread+damage console) or Breen cluster are a good start.
I was using a forward and rear Fleet Quantum Torpedo with my Jem Dread but that was mostly due to the fact that I transferred my Federation Tactical Captain the was using a rapid fire Torpedo build over to the Dread for giggles and decided to run with it.
I recently re-spec my Tac Captain to make better use of the A2B build with the Dread and dropped Torpedo's from the build completely.
I still refuse to buy the Bug ship to get the Hanger Bugs for my Dread but I do have 12 Elite Scorpion Fighters and I see their 12 level 1 High Yield Plasma Torpedo's has mine.
Torpedo's can still be quite useful in PVE and if you like them than go for it
I use Peregrine fighters myself (the Advanced but not Elite version); I just like the style of them and (I freely admit) it plays into my weird Star Destroyer* fantasy that this ship has going for it <,<
*When I first bought the ship, I outfitted it with disruptor cannons and turrets - it was glorious up until I realized there was nothing to serve as TIE fighters; so I switched to Peregrines and Phasers. StarTrekWars woo! (I am a silly person can you tell?)

I have an alt on which I fly without torpedoes and use the elite jem'hadar set.
I have a mix of polaron and pure polaron cannons and turrets (I think thats polaron energy type all the way, isn't it?)
I do have the bug ships.
Like the poster above who flies his ship as a fantasy star destroyer... I use this build as a fantasy Babylon 5 Interstellar Alliance destroyer class type thing and vision the bug ships as White Stars accompanying me, that I can dock.
If torpedo spreads are your thing than beams and bfaw is your best friend, if cannons are preferred than make better use of csv. Bfaw mixed with cannons and turrets isn't going to do a whole lot of good because you are limited in BA's and won't be hitting very many targets with so few beam weapons.
Then I have to decide to give up the Rom experimental beam,
KCB, or an Acc x3 dual beam.
However, 360' on kinetic, subsystem targeting, and BO3 has been sweet.
KCB can stay, since it allows the Omega Weapon Amplifier proc, if you've got the Borg console mounted, and has a base damage such that not having synergy with BOffs isn't much of a DPS issue. I use one on most of my builds.
Your DBB can do subsystem targeting and does bigger damage when used with BO3.
I'd drop the Rom beam, then go with Rom torps if you're running Plasma for the two-piece bonus. Even with three-piece bonus, I didn't find it that great on a cannon build. It's great for all beam array builds, but if you're having to point into a narrow arc anyway, you're loosing DPS relative to a DBB or DHC. Unless you've got the three-piece bonus, then it becomes roughly a wash in DPS difference, but you have to fire off the bonus beam attack regularly (more effort for the same effect).
I have Rom plasma single cannons now, mainly to maximize the up time on the disruptor buff for my elite scorpion fighters. So DBB, 2x Single cannons, and Rom torp up front; KCB, and 2x turrets in the back?

That should work decently. Nice wide arc on all the forward energy weapons with 360 degree weapons aft. Synergy with the cannons and turrets using cannon abilities, then the dual-beam bank for spike damage and subsystem targeting, your build should be able to tear through most content. Slower content (CE, STFs) you could get higher DPS by going DHCs, but lining them up in faster content is a pain (Fleet Alerts, Tau Dewa patrols, etc.).
Well, beyond getting all beams of some type and the wide angle quantum, I think I've reached the end of my JHDC setups that I'm willing to grind for. I hope they add more or change up the PVP content so I can bring my cruisers and carriers into it. As of now, I can't pug or manage the time to build a team around my Dreadnaught. Perhaps when they let you use your whole collection of ships and put Boffs to command them will the Carrier shine in pvp. Meanwhile, I have a MVAE gathering dust I can PVP in, and upgrade to fleet when my fleet gets it's T5 whatever.
Wish there was a Dominion Rep system to get elite attack ships from...

Vetteguy904 runs 2 dual beam banks and the rommie and omega torpedos. along with elite scorpions, it's a heck of a lot of plasma flying.

Not a few, go with just one dual beam bank, since you're forward focused with cannons anyway, if you want spike damage with BO3.
