Is there a specific forum for the console versions of STO? I'm going from PC to XBOX and having trouble finding any info or help on the xbox version of the game (even instructions). Any help would be appreciated.
Only the bug report subforum. You might find a reddit or discord group, but the only discord group I know of is for PS4/5 players.
You can ask questions here and in the academy subforum. It will help if you include Xbox in the title, for example "Xbox: how do you give hangar pets orders?" (Answer: you don't, they are always set to attack.)
The main thing to get used to is the radial menu for powers. It's a lot easier to use if you click on the power with I think the right shoulder button. With that, many of the powers can be set to auto-fire either as often as possible (good for things like Emergency Power to Shields/Weapons) or for heals when your shields or hull drops down to 75%/50%/25% or for some other condition.

Aside from the the use of the controller and conditional triggers for powers, and the fact you can get LTS for free (without the stipend) or alot cheaper than PC, there is practically no difference between the platforms. The only thing you can't do is customise power levels and set hanger pets to do attack, defence etc.

Is it possible to remap any of the functions to a different key? Pressing down on the left stick continuously to balance shields and using the same stick to steer is VERY awkward for me to do well.

Nope. I'm afraid you're stuck with them and it's probably due to the conditional powers tied to specific buttons. You'll get used to it quick enough. I do alot of shield rebalancing without issue....when I remember to do it! I would have said you could probably buy a pad you could reconfigure, but unless it's MS's own, you're out of luck, as 3rd party controller support was supposedly dropped a month or so ago....although I am not 100% on that.
With the conditional powers, take time to think about when you want it to trigger. Having everything trigger at once leaves you temporarily locked out whilst they fire off, especially when your character is highly advanced. If you set your conditionals to when you believe you need it, such as Reverse Shield Polarity set to trigger at 25% avg shield left, you'll get better use out of it. However, not everything has a trigger, especially console powers, so you'll need to get used to using the 'wheels' on the fly.
