im looking to find a discovery ship or variant of that particular ship not part of any bundles if possible

There aren't any sadly. Most of the new hero ships, including all variants of Crossfield, are locked behind either expensive bundles or gambling (with an average acquisition cost of $200+).

There's the year-long Event Campaign going now where over multiple sub-Events you can earn a choice of any Premium Lockbox or Promotion-pack ship, but you've missed the first one if you're on PC, and are part-way through the second of five Events now if you haven't been doing them.

Well, the Legendary Glenn Temporal Operative Science Vessel is in the 10th Anniversary Bundle, but you apparently know that. The Crossfield Science Spearhead is available from the Infinity Lockbox. The Crossfield Science Spearhead Refit is also available from the Inifinity Lockbox. Of course, those last 2 can be acquired from the Event Campaign or the Exchange as well. Those would be your best bet to acquire one.
