I have a number of favorite ships myself but since playing with them a lot now I have kind of gotten burned out with most of them, I guess it's mostly due to the ship setups such as boff abilities, console slots and special console sets. I loved the Prometheus class but I have found myself tired of using it now that it's hard to want to pull it out and use it anymore.
Thats why all my chars have 3 different full equiped ships… sci, eng and tac... so i can change ships according to the mission, that keep things fresh (also have different energy setups)
Usually, I just change things up a bit build wise and it refreshes my interest in the ship. I think the biggest issue I have is 'ship overload,' I have so many ships that I like that most of my characters usually have a couple of 'main ships' that I swap between. If I made a character for each ship, it would just be way too many characters.
Nope, never.
I occasionally happen to fall in love with a new ship they release, in which case I usually make a new character with the intention of using that particular ship.
But get tired of my favorites? Nah, my main still rocks the Mat'Ha Raptor I got when Delta Rising was released and I've been using the Galaxy Class since the beginning of time. Not only did I not grew tired of her, some of us even maintained the now legendary Galaxy "threadnought" for a long time, demanding improvements to the old gal until Cryptic gave us the Andromeda.
the kelvin timeline intel ship is my favourate, unfortunatly I haven't been lucky enough nor do I have the cash to obtain one from a lockbox so im flying around in a chronos dreadnaught until I either come into some money or the ship can be bought directly from the c-store.
For me, just switching between Beams, DBB, and DHC/DC with and without a torpedo changes the flying and fighting style sufficiently to keep it interesting.
That said, some of my alts have been using the same ship/loadout since hitting endgame - Klingon TAC using a DHC/DC Mat'ha, VanJem TAC using a DHC/DC Recon Ship - only taking breaks to get the trait from other ships.
Tired? Not exactly. I still totally love my sci-torp Vesta. However, there are times when I've been wanting to try something different, which is why I fly something other every now and then (and even started developing a new toon).
Not tired per se, but I have had new and exciting favorites end up taking their place. Most recently I've hopped from Intrepid to Wells to Crossfield, with my butt firmly lodged in the later.

My first love was the 2nd Anniversary Event ship; the Odyssey. Now I'm flying the T6 Endeavor with the Odyssey skin. That original Odyssey sits right next to her with a budget phaser build. Never will get tired of that ship. In fact, I got back into STO because I ran across a screen shot I took of my Ody.
That said, I constantly tinker with builds. My main is AP beams. Have a Guardian Disruptor build, an Andromeda Polaron build, and currently assembling Tetryon and Plasma builds. For pure DPS, I run an AP cannon pilot escort.
Most of my alts have a set build. My KDF and Rom toons haven't settled into one yet. That is where I get ship fatigue. I either like the appearance or I like the stats of Rom and KDF ships. Almost never both.
I jump back and forth between a couple of ships, but I really enjoy my Crossfield. Now, if only they'd give me the interior and accurate warp visuals I'd be happy (and yes Cryptic, I'd pay for them if you offered).

I have a rather complex mid-set about performance, style and fitting of the selected ships for my chars.
I only abandon a favorite ship when I identify a better one which then soon becomes my new favorite ship.
