Some other ships have no canonical established size (e.g. their actual size as depicted is different in different scenes). But in general, the canon ships are at the sizes they should be and fit in relation to each other.
The Defiant and KonsTitution aren't. Both are larger relative to other ships than they are in the vast (overwhelming) majority of screentime. The same goes from similar small ships like the Miranda or B'rel, where they are bigger compared to say a Galaxy than they should be.
The bigger ships (sort of Akira sized and bigger) seem to be in scale relative to each other, more or less (obviously excluding the Dreadnought Vengeance which is about twice the size it should be).
The Konstitution is however exactly the size that CBS told them it should be, so it's not a mistake or anything. The IP holder has the last word on such matters.
And the Defiant remains inconsistent in its size, so one cannot really argue that it's too small or too big. It has one of the possible sizes.
I believe there is an argument for the Scimitard to be too big. But I am not sure.

Oh it is a mistake. It goes by a non-canon size not its onscreen size. I know it was part of the deal to get it ingame, however, it's still as much an error on Paramount's part as the incorrect sizes in the old DS9 technical manual were, they do not match the scale the models were built to by the designers, shot by the directors, and seen onscreen at their true size as stipulated by the IP owner's canon policy.
If (for example) part of CBS' stipulation for the Excelsior's inclusion ingame was that it was built to the ~510m figure from the DS9 technical manual instead of its canon size of ~470m size then it would still be a mistake for the ship to be scaled thus even if CBS stipulates it; as the ship is canonically ~470m.
Like the Konstitution its size varies up to ~600m from its canon size and it is this big for (as with the Konstitution) the vast, overwhelming, minority of its screen-time.
The Defiant is similarly consistently one size in the majority of its appearances (~120m), this is an example of the a ship being shot differently to the scale the designer built it at (i.e. 170m). But unlike the Konstitution or the Excelsior the Defiant never has its internal structure on display so it cannot be said to be 150m (which would require 5 decks as on the MSD) or 170m (requiring 6 decks as on the turbolift display).
The Scimitar is about twice the size it should be ingame,

"Canon was inconsistent, too" is no excuse. The ships in game are scaled for convenience, not accuracy. One need only compare the size of the windows on the ships to tell they aren't equal scale.
what I mean is are we going to see bigger playable ships? ships as big as the Borg cube or Voth Citadel ship? nothing insanely massive but I mean the largest ships we see often in battle zones and the like. what I would go after if they do add those types of ships as playable starships. I would go for the Iaidon class capital ship of the Iconians.
