These should be accessible for most ships already. There are some ships that only have the Bridge, and this is the same on PC.

Should be full interiors available for all ships you buy from Spacedock. You also can customize your interior when you visit the ship customization person. Default is the exterior of your ship, but there is a little tab for "starship interior" that you can click and change your bridge option, and "size" of your interior (small, medium, large).
Most Fed and KDF ships have interiors, but there are a few, especially 'alien' ships that only have the bridge. The easiest way to find out if your ship has an interior is to go to a Ship Designer, it will tell you there, or go to your bridge and locate the Turbolift.
Bear in mind that Cryptic will only produce an interior if it has a use with-in a mission that they have produced.
