We know one of them was the Amar. Is there any source that lists the ship names of the other two?

    Not that I'm aware.
    And technically, they weren't really destroyed, they were digitized and stored in V'GER's memory banks.

    Though I'm sure if given the chance, all those who were put through the process, would not feel the same.
