Cardassian: I believe they use the phaser+disruptor hybrid Spiral Wave beams.
Kazon: not certain.
Vaadwaur: They use Vaadwaur polaron. Not sure what the mods are yet.
Gorn: Disruptor, I think.
Tholian: Refracting Tetryon
Dominion: Dominion Polaron
Undine: bio phaser/disruptor? Antiproton? Not sure.
Voth: Antiproton
I believe that's what they all use. Someone feel free to correct me.

gorn drop aceton assimilators.
vaudwar use tricobalt projectiles.
cardass use polaron or something purple often.
Why is this really useful? Trying to stack against one enemy is usually not worth the trouble in space / pve ... level 60 builds don't generally have room for a ton of armor type consoles and you can't reasonably carry 2-3 different shields around? Its neat to know, but not really useful?
The limited NPC officer skills are more handy to know, such as voth using GW, or tholian special tyken's rift that spawns enemy, or vaaudwar's bombard, things like that. Guns on NPCS are really about the same regardless of type. And torps on NPCs are MK MCLXVII at least -- kinetic resist is your friend.
It's really not that important to know every enemy's weapon type.
At endgame you're just going to use neutronium consoles which have + energy damage & + kinetic damage resistance. Preferably fleet consoles since they have additional mods too.
