Well, as the title says, if you set an NPC to be in the state of a mannequin it still does breath, which is kinda odd if you want to recreate a dead static object.
The "mannequin" animation only refers to the pose struck by the NPC - it doesn't literally turn the NPC into a mannequin. Actually I don't think any of the other animations get rid of the breathing, either - you just have to hope the player isn't zoomed in close enough to notice.
