That battle was pretty lopsided, that terminator was packing some pretty heavy firepower that would have done a lot more damage than was portrayed there, both Robocop and a Borg have squishy parts they can't afford to lose that would have been turned to mush fairly early in the battle.
If something is not broken, don't fix it, if it is broken, don't leave it broken.
How would the fight have went if it were a three way brawl between Robocop, a T-850, and a standard Borg drone?
Depends on whether or not the drone is part of the Collective. If no, it gets curbstomped in short order and Robocob goes on to defeat Terminator in crappy 80s stop-motion animation fashion. If yes, it assimilates one or both of the others and the Borg win by technical knockout.

To be fair, there isn't much of Robocop that is actually organic. Basically all that is left is the brain and the facial skin, maybe some of his digestive squishy bits. Even the skull is mechanical, according to Dr. Marie Lazarus, RoboCop's chief technician. (Robocop 3, as much as I'd like to forget that movie)
