I'm looking to replace an aging laptop (I already have a very good gaming desktop), and in my search I came across the Lenovo Yoga 2 (odd laptop/tablet gymnast device running Windows 8). It seems like the specs would also work for playing STO.
The video output can be "flung" to a TV (would work with mine) and uses USB connections for mouse/keyboard as well. Not sure how convenient this setup would be, but seems interesting.
Anyone bought one of these?

I recently did purchase a Windows 8-RT Tablet. The RT means that you cannot install anything that isn't in the App Store. And STO isn't in the app store.
So do check what you can install, especially if its a tablet, before you buy it. Otherwise you'll end up with an oversized STO Forum machine that cannot run the actual game. Which would be really annoying.

Personally, I'd like to get my hands on a Surface Pro 2. I think I could have a lot of fun with one of those suckers.

WinRT is a tablet OS, like Android and the iPad OS's - compared to these it's roughly similar these days, in most day-to-day aspects. Interesting for office use, because it comes with Office preinstalled.
However: WinRT is not a desktop/laptop OS. If you expect a tablet to compare to a laptop, you will indeed want Win8. Devices tend to have better specs, lower battery life and large price tags. These will run most windows programs, though, including STO, if its CPU/GPU will handle it.
I'd love a FullHD Win8 tablet with decent specs for a nice price (somewhere below 500 bucks), but haven't been able to find one so far. Barring that, I'm looking at the WinRT Surface 2 or Nokia Lumia 2520, as I will mostly use mine in an office/productivity setting - got a gaming laptop
The Toshiba Satellite Click is a 13-inch 2-in-1 tablet/notebook running full Windows 8 (not RT). It has an AMD processor with Radeon graphics so it can handle STO just fine, but the 13-inch screen and power consumption of the graphics for STO mean that the battery will die sooner than you'll like.
STO isn't really made for tablet gaming ... the devs would have to seriously rework the interface for that. I'm not sure you would really want to try to play STO on a Windows tablet ... I'd recommend a good laptop if you want to be portable and play STO at the same time.
