Definitely the Engineer version of the Kumari (Charal) or the Science version of the Kumari (Khyzon [spelling error?]). They're just as durable as any normal escort, and have 5 forward weapons.
Unless you PvP, you don't want the Jem'Hadar Attack Ship (the only reason the Jem'Hadar Attack Ship is Awesome in PvP is because of its awesome Turn rate).
The ship you use isn't nearly as important as understanding how energy levels, firing cycles, resistances, etc. works.
My general suggestion for people wanting to play escort is to pick up a mirror patrol escort from the exchange. It's quite cheap at the moment and very difficult to go wrong with(beefy enough to tank elite cubes while still having all the firepower). It's a very forgiving ship and a great ship to use to learn the game(/will be able to figure out for yourself what kind of later-game ship you want to specialize towards).

Yeah, pretty much this. It's not so much about the ship itself as about how you set it up, get a cheap ship like the MPE to get familiar with Escorts then move onto something that more fits your playstyle if you feel like it.
