my fleet paid 200k dilithium to get these plaques and the one enterprise that should have been there is not!!! take off the stupid xcv enterprise if you have too!!!

I heard Thomas address this specifically somewhere (maybe twitter). There are plenty of other 'Enterprise' ships. He had to pick just a few.
The list as it is includes an early, independent command ship named Enterprize, the first nuclear Enterprise, the first spacecraft Enterprise, the (presumably) first warp-capable Enterprise, the first Starship Enterprise, and the first Federation Enterprise.
So while the 'Big E' is surely important, it, like the handful of other 'Enterprise' ships from the 18th, 19th, and 20th centuries, just happens to not have the technological 'firsts' the others do. And another picture of an aircraft carrier just wouldn't stand out that much among the much more varied later incarnations.
