The Dreadnought is more difficult to use, but has more DPS and Alpha Strike tactic opportunities, and requires a lot of foresight and planning. The Odyssey is a lot more forgiving, easier to use and form tactics around, and lets you make up TRIBBLE as you go, but your DPS is going to be lower and you are going to have no Alpha Strike at all.
I would say that the Odyssey is better, regardless of version.
With the tactical Odyssey, you get just about everything in the Dreadnaught, except for the forward phaser cannon, and you also lose a little bit in terms of maneuverability - although both have the same base turn rate, the Odyssey has worse inertia, which makes the Gal-X (and all Galaxy variants) feel like they have less "traction."
As previous posters have noted, the Dreadnaught requires a lot of foresight. I have heard it described as an "engineer's ship," although I'm not too sure why - from what I understand the Dreadnaught is best used by cloaking, dumping all your buffs/debuffs, decloaking and firing on your chosen target, which is usually best done with a tactical officer. I'm not sure what a science captain would want with a Dreadnaught in practice, since there are other cruisers that are more friendly towards science (science Odyssey and the Star Cruiser come to mind immediately).
If you do pick up the Odyssey three-pack (expensive) you get a HOST of options to pick and choose from. For my money I'd pick up either the Science Odyssey or the Tactical Odyssey, if you don't care about saucer sep and aren't getting the three-pack.
Although the Dreadnaught has some very interesting abilities that you simply won't find on any other Fed cruiser, simple fact of the matter is that it's something of a specialist ship. I've heard you pretty much have to plan your character around the Gal-X to really get the most out of it. While I'm sure that, with practice, you could adapt your abilities to match it and get the most out of it, the question is if you really want to spend that amount of time.
The Dreadnaught also has one restriction in particular that might eat your enthusiasm - you MUST use phasers on the ship. While it is possible to use other energy types, if you put in other energy types, you're either gimping your regular energy weapons, or you're gimping the lance. As such your loadout needs to have only phasers for your energy weapons, coupled with Phaser Relay tactical consoles. Additionally, the DC/DHC capabilities of the Dreadnaught are often considered close to useless due to the low turn rate.
As a final note I disagree with what was said about DPS. If you exclude the phaser lance (which you can only use once every four minutes) the Tactical Odyssey has pretty much the exact same DPS potential, considering it has the same number of weapon slots and the same number of tactical consoles. If you include saucer sep it probably has slightly HIGHER DPS. But that comes at the expense of the lance, which, if used properly, will gut an opponent rapidly.

Considering how a dread can use all sorts of cannons the dreads ps are still higher, at least frontal.

Although the dred can equip cannons, it jas such a low turn rate that you would never be able to shoot them. Sci oddy has higher dps due to the passive ss.
When in doubt, (hehe) c4!

You haven't also considered the Regent Assault Cruiser refit? It is in the same price range, has a LTC tac station and handles better then the Oddy or Draednought.
I don't have the "special" three Odysseys, just the first one that is the same class as the Enterprise-F that was a temporary reward for completing a mission when the new Enterprise was unveiled. I enjoy my Venture-X much better than any ship I have used on my Engineer.
It is set up as a beam boat with no torpedoes. I carry a torpedo launcher just in case I come across a silly thing that can only be hurt by torpedoes (can't remember the mission I last encountered one in, it was an early mission in Sirius Sector though, while I was power leveling my second account).
The main reason I think I enjoy it is because it is my favorite ship from the TNG Series. I felt like a baby with the best rattler in the world when I seen Riker decloak and rip through the Klingon ship with the forward lance splice and then the third warp nacell.. I was in love, still am.
I love timing my lance just right, when the shields drop, fire and usually can destroy most small ships or at least drop down larger ones to half hull. It's easy to miss, but also easy to hit once you get the feel for it. I rarely miss anymore.

IF you are a Tactical Captain and IF you use the Tactical Odyssey and IF you get the full bundle then the Odyssey is way ahead of the Dreadnaught. There is no real comparison. It tanks better, deals more damage, can turn better, has fire and forget heals, and can warp faster.
If on the other hand you are an Engineer looking for raw damage in a boat that cannot turn to save its life... Theeeen maybe the Dreadnaught is better.
it makes an excellent pvp ship and is fairly useful in stf's however I found it lacking in the new fleet stuff.
The oddy with the 3 pice bonus is one of the toughest ships in the game.
I use a tac captain in a sci oddy and have a split weapons load out between frontal dps and broad side. If you speerate the saucer you end up with an 18 degree turn rate higher still with apa or apo and given that you can also slot 5 tac powers and still maintain a decent amount of healing it turns into a rather deadly weapon.
The regent is a nice upgrade to the excelsior concept. If you like the excelsior then the regent is a step up. The universal lt is nice but chances are you will slot a sci in it since there are no dedicated science slots.

Ok I have to say something about this..First of all, Tactical captains should NOT be in a cruiser to begin with. It was not designed to be that way.
Yes you can fly any ship you want, but you are just gimping yourself. An Engineer is going to get full benefit out of a cruiser where as a tactical officer is going to gain full benefit out of an escort ship. It is very irritating to watch science officers flying around in escorts and watch engineers flying around in science vessels..Just because the Tactical Oddesey has the word TACTICAL in it does not mean it was made for tactical captains.
