There are some bridges that are more appropriate for smaller ships.

Agreed. There are some ship bridges are HUGE! almost the size of a football field. However, there are a few models that are more appropriate for smaller vessels. I am not sure of the names of the top of my head, but you can look at them. The Defiant style, the Intrepid style, and the Standard starter style seem good for a ~300 crew ship.

A shame that we have to pay for something that is only fun for RP and does not really have an in game function!

Gee, if Cryptic would only give us a way to earn these things while playing. Some sort of Dilithium system where you play the game and earn Dilthium, and then you could convert that Dilithium to Zen. That would mean we wouldn't need to pay for these things at all. Just play, like we would be doing anyway. :)
STO is about my Liberated Borg Federation Captain with his Breen 1st Officer, Jem'Hadar Tactical Officer, Liberated Borg Engineering Officer, Android Ops Officer, Photonic Science Officer, Gorn Science Officer, and Reman Medical Officer jumping into their Jem'Hadar Carrier and flying off to do missions for the new Romulan Empire. But for some players allowing a T5 Connie to be used breaks the canon in the game.

You could use the Belfast Bridge and Interior from the Deep Space Bundle for 2250 Zen. It is the most appropriate bridge and interior for smaller ships since it is the Defiant bridge and interior.

Each class of ship comes with standard bridges that unlock as you level. The escort and Science vessels have appropriately small bridges for there ships. I currently have survey on my Intrepid class and it fits perfectly. Oh, and it was free.

You don't have to pay for a bridge if you do not want to

Actually, it DOES have an in-game function. Visiting your ship interior is the only way to get certain special Duty Officer assignments, such as the Tactical Special Projects and Culinary/Bartending assignments. Those assignments and similar do things like generate supplies, consumables, and even cool new gear.

The ship interior is also the the easiest way to switch to a small craft for certain missions and events.
