I'd love to see Klingon hunting missions, from what I've read and seen on a few episodes Klingons acively participate in dangerous hunting expeditions to prove their bravery. This is probably true of any warlike society, the Mongols, Norsemen, and others like them commonly hunted dangerous game. It would be cool to go on a big game hunt and bag a mugato 1 horned ape thingy that you could mount as a trophy on your ship. You could get food stuff consumables this way too, instead of heart of targ it could be steak of mugato. Of course the Feds will want it too but being politically corect instead on killing the animals they could stun them, take genetic samples, record the species, and mount a hologram of the beast.
And to go with it ingame, why not a series of combat useful but not neccassarily combat designed hunting weapons?
Or would love to go hunting big game with the equivalent of both the chonnaQ (chon-NAKKH - Eng: chon-NAK) or a Klingon Elephant gun if allowed to hunt larger more alien prey that has a higher chance of killing the hunter.
I do agree that only the simplest of traditional weapons be used in a hunt normally but find modern is ok for deadly deadly prey and love the very accurate example of the how the Physiology of the Klingon differs from the human. Our Hieghtened sense of smell.
I agree for this too we need more Klingon oriented content like this. I think Cryptic should put some priority on this too so when they get to working on the romulans their hirogen sided content since they will be romulan allies will need this too but as in more of the hirogen style.

I would like to see some tracking and stalking in these missions too. Also there should be a chance for the game to elude you or kill you making the hunt unsuccessful.

Hmmm, not sure what you consider hunting to be but that's not it. Hunting involves tracking and stalking your prey with a high chance it may get away or if it's dangerous game turn the tables and hunt/kill you. A hunt is not always succesful and is not running around a map fighting/killing Borg who you know where they are and have no problems finding them.
