which manufacturing skill should I learn? can I learn more than one?

what's the difference between the servers? I understand that some are PvE and others are PvP, but with Heaven's Tear and Sanctuary, the game says they are both PvE. what's the difference between them?

thanks a lot. mind if I spam this thread with more noobish questions? I'd like to know the recommended order of learning skills for the full attack cleric for the first levels - say 10 to 15. btw when can I learn a skill? every time I level up? I got to level 9 with my first character, but I didn't want to learn any skills…
