Gaining Stars on Weapons

My lvl 47 axes that I crafted were 1*, 2 sockets. When I put 2 lvl. 5 gems into them, they suddenely went up to 2*!
What I have waiting for me now are lvl. 57 dual axes, 2*, 2 socket. Will the same thing happen with these? That is, if I put two level 5 soul gems in them will they go to 3*? Or will I need lvl 6 sould gems to do this?
