Ah. Maintenance and time to roll out Mod 6. In the past tasks running at the time of update simply had the clocks continue ticking and when the update was completed the tasks had progressed as expected. This time around a couple of the existing Leadership tasks have been tweaked and their completion times have been expanded. So over thinking this, I see a legal conundrum. Specifically, the 'contract' under which the tasks are started.
Currently "Destroy Enemy Camp" will complete in 12 hours (less depending on the Asset levels you use). After the update DEC will take 16 hours to complete. What about those DEC tasks running AT THE TIME of the update? Will they continue with the rules (contract) under which the task was started (i.e., complete per the 12 hours stated) or will they suddenly morph into using the new rules (completing per the 16 hours stated)?
Same applies to "Deliver Metals", albeit different time-to-complete.

Very good question.
It's a moot point for me, though. I plan on running high-xp leadership tasks, rather than high-AD value.
So in the morning before maintenance I'll be setting up War Games Training x3, Patrol the Mines x3, and Fight Off Spellplagued x3 -- subbing in gathering quests for characters who will be leveling armorsmithing professions.
I dunno, according to the patch notes nothing at all about Leadership is changing beyond the cap increase. Surely they wouldn't ninja nerfs into the patch without mentioning it.
I'll be running nothing but high XP tasks after the update for sure. I thought 40,000 XP (to level up now) was high but then realized it isn't that much higher than what it took to go from Lvl 19-20.
First of all: any time anyone brings up the term "legal" I can't help but to laugh. Pro-tip: you have zero legal standing in any of this. Okay, 'nuff said on that nonsense, moving on.

In answer to the OP: I do believe when starting professions tasks that the timer is set when you *start* the task; it simply sets a "finished" date and time. So after the update the "set date and time for completion" code will now be 18 hours instead of 12 hour (as an example) - and that date and time is set when a task is started.
Since there are tasks already in progress (what progress? There is no progress. It's instant; the award of the reward is simply delayed and a countdown started.) - will still give you your reward when it originally said it will. The same date and time that was set when you started the task. However, the new delays will go into effect when you start your next tasks after the update.
You only need to understand how this stuff works under the hood:
Button available if inventory contains required virtual items.
Player clicks button = give virtual item prize.
Based on inventory virtual items required, give virtual prize (now [current date&time] +12 hours=new date& time)
Since you started the task before the update patch is implemented the reward time is already set.
(And for you code heads: yes my example is extremely simplified. LOL)

What the amped up spirit here is trying to say, is that the time it takes for your professions to complete, will not be changed.
Right after the new times for completion was announced on preview, I started a task that was targeted for change, transfered my character to preview, and checked how long it was until the task would be completed.
The time to finish said task was the same on preview as on live.
Only if I canceled the task and started it again, would the extended time apply to it.

There's no legal contract that you signed by starting a task. The only contract you signed was when you agreed to the ToS before playing the game, which basically says that Cryptic or PWE can change anything at any time, and you understand and agree to it.
This would be one of those changes.
But to that end, the rest of the posters are correct. Your tasks will count down and finish as stated when you started them this morning.
