I have a green mount. If I want to get it to epic level (purple) do I need to buy both the green and blue training manuals or can it be done only using the blue training manual?
Thats why even though they reduced the price, if you have more than 1 character over level 20, its usually better to buy a purple zen mount since it needs no upgrading and in unlockable on all your characters.

As stated before, you will need both tomes. Your mount can reach 110% with the training mount manuals but they will still remain their original color (white, green or blue)
I thought the blue manual would get your mount to blue/rare 80% and that's the max you could upgrade a non-epic mount to. Thus the epic mounts' exclusivity.
Could someone really confirm you can upgrade an Appolosa Horse to epic 110% speed?

The problem is mounts come in 3 speeds, 50%, 80%, and 110% but there are 4 levels of rarity. This causes all kinds of confusion. Because you can have blue 110% and purple 110% speed mounts.
The key thing is to not look at the color but the speed. The first book will take any 50% speed mount and make it an 80% speed mount. The second book will take any 80% speed mount and make it 110%. Color is pretty much meaningless in this regard.
