So, there's something up with the weaver guy... he's an idiot.
If I send him onto an "intense wool-gathering" task it takes the idiot six (6) hours to gather 10 sheets of wool. But, if I send him out to grab just two (2) it only takes him ten minutes. Hence, I can have 10 scraps of wool in my grubby hand in less than a single hour.
This isn;t the only, um... idiosyncrasy, there's more to be had there.
Personally I use the long-duration tasks when I can't be on the computer long and/or set them up to run overnight. It's less for the sake of getting mats and more for the +200 prof EXP while you sleep.
That is how I use them too. I use the long intensive tasks when I just want my artisans to be on auto-pilot for several hours.
Edit: It's also a good way to mindlessly level up your artisan. No thought required about resources required for a task, just click "intensive gathering".
It may seem stupid but it's actually very cool instead, if you take into account that in other MMO you get nothing if you are not online or even playing. (and well, farming to level up professions isn't really the most funny thing you can do in any MMO)
So yeah, just stick with the small time-consuming tasks if you're online/bother to, to have better results items-wise and just send the guys in a blackhole for hours if you can't afford to be online for long/can't be bothered to refresh the task everytime.
