I tried clicking N, and all the professions are available, including Alchemy, but I cannot find anywhere to select a specialist as outlined above. I have spend a couple of hours gathering recourses, but I am still level 0 and no sight of the specialist options.

Click on Alchemy. It'll give you the task 'hire your first apothecary' or whatever it's called which takes 10 seconds. After that you'll have level 1 tasks available to use the guy on.
The first few tasks of Alch don't reward exp. Look at the rewards and it'll tell you what the reward is. You'll need to find the Basic Alchemy Skills scroll to advance past level 1.

You probably have to scroll down the list as it is likely sorted highest to lowest level and you need the level 1 alchemist task.

I agree ... how in the heck to you proceed or advance in Alchemy? I was excited about it, but once I started it, its like, why? You can 't advance without a scroll, can't seem to find any scrolls, so what's the point of even trying? You get no experience at all in any of the steps except for the last one. You can't scroll down to use the next job because it is not available without the experience.
You get the scrolls from doing the task called experimentation....this task has a chance to give the scroll but will not do so every time, and sometimes more than 1 scroll is needed in order to advance.

Alchemy is way different then the other professions . You can't power level using multiple toons . Each alchemist much level up himself . You have to do the ' experiment ' task multiple times to unlock all the recipes for that level .

A few things you might be stuck on.
First. When you open the professions window. Click the alchemy button to only see alchemy tasks.
Second. You have to hire an apothecary to do anything. Including gather alchemy resources.
Third. (*I think this might be where you are stuck*) If you have your filters on you will likely not see the tasks you need to do. Turn the required items filter off and look at the low level tasks. Some of the tasks require solvent or other materials that can't be gathered with the skill. You buy them from the profession vendor in the market (they are really cheap though).
Some more detailed stuff:
Alchemy only has one mission that grants XP per level. It also has one experimentation mission per level.
The XP granting mission requires alchemical knowledge scrolls (or something like that) that you only get from doing the experimentation mission. Its random whether you get it or not, so you might have to do the experimentation mission several times for each scroll of knowledge.
What you need to do is look at those two missions and see what you need to be making. At level one I think you can only make the stuff you need. At higher levels you can make a bunch more stuff. But to save mats you need to only focus on what you need for those missions.
