I've just PvP'ed with my Lv60 Guardian Fighter and it really sucks. Always dead and there's no chance to do any kind of DMG. Also, it is a "Tank" class but, my life goes down extremely fast.
At the current time for PVP you pretty much want to be following the Conqueror tree for the GF, especially if you are aiming for a high kill count. however personally I prefer keeping my defence and deflection being respectively high which I find works for my play style but of couse lowers my DPS compared to a full on Conqueror build.
As people have already mentioned though the balancing patch coming out will change a few things they may make tanking more workable, but to be honest the changes seemed rather lackluster to me and I don't think they will effect the PVP all that much.

Envy has made a pretty neat PvP guide for Guardian Fighters. It explains the basics, and it also covers what feats/powers/stats/gear you should try to focus on. I've used it myself and I constantly end up with most kills on my team with little deaths. Of course play style has a lot to say as well. There is little point charging into 4 enemies if your team is nowhere near you.

Get the stalwart set, spec for dps, join pvp, win.
Oh, also helps to stick to bull charge, the lunge, and frontline surge. With indomitable strength and a proper rotation you can roll just about anything from full health to dead without them being able to fight back.
