Nice list mate, animations are sometimes important for immersion. i.e. I do not want my hard gladiator to start spitting fire.

I suppose there isn't a way to remove other parts of the group to force a solo encounter.
In theory it is.
You could switch to detail view in editor and then grab and move unneeded group members closing them in unreachable rooms. Problem is - such group can't be made part of quest objectives because player can't kill all its members. It can be used only as an optional encounter.

Not true at all. Spawn a large number of guards in that unreachable room and they can kill the extra mob members. I do this and it works just fine. The problem with doing this is that if you kill the single mob before the guards kill the extra mob members, the sparkly trail will take you to the "center" of the encounter, and of course it will look like the kill x didn't work right and then suddenly it did on some delay.
Bring plenty of guards, especially ranged ones since they don't have a problem all attacking a few things at the same time due to spacing.
This may not be the place to ask this question but I couldn't see anywhere else even close. WHY do we have skins at all? Is there something wrong with an orc being an orc... or a kobold being a kobold? Why have skins at all for the monsters? Why not just the monsters? Anyone?

What happens when I want an orc, a troll, a tiefling in guard uniform, a dragon, and a mimic as an encounter?

I would love to use some of the creatures listed here in my adventures. However, I can't seem to find them in my Encounters list in the Foundry. Are they gated somehow? Not sure how to best search for these specific critters. Any suggestions?

These aren't gated - you can find them by reading across from the table. So if you wanted an Intellect Predator, you can find one under "Abolethic - Mixed - Hard". (Some of the Composition information might not be accurate - check both Melee and Mixed for anything listed as Melee.) Most of these (other than those starred in the table) come with other creatures in the same encounter.

Indeed. This is probably one of the most frustrating things in foundry for me. It kind of blows having to go through a few different encounter types to figure out the best fit. This is particularly annoying when you want to mix up different types of mobs together. I'm working on my mega shopping mall map and I'm concerned about running out of budget and/or having to just knock the player experience down a few notches.

Or you might want soldiers with a particular uniform. Or ... whatever.
