I've seen others use them in their foundries and wanted to include in mine since I saw the first one in game. However I can't find them in the encounters! Was wondering if anyone could tell me where to find them or if there was any way to create just a single mob encounter?

Found the answer to the solo mob thing, literally right after I posted this. I still want to know about the mimic though.

Those are not mimics, they are other encounters with the mimic costume.

This is correct.
Use a single encounter (melee prefer) and customize it with the mimic skin in the NPC list.
There is a rumor floating around that I am working on a new foundry quest. It was started by me.

What you can do is put in an encounter with a difficulty of your choosing, doesn't matter how many monsters are in it. Provided that encounter isn't part of a Kill Objective, place the enemy you want to skin as a mimic where you want and place the others in an some unreachable place. That way the 5-enemy encounter, for instance, is still in your map but the player can only interact with 1 of the monsters.

There are single encounters. Look for the encounters that show just 1 mob in the little picture Also you can read the mob descriptions that say how many are there.

I see. I can't believe I didn't think of that. Unfortunately that sucks if you can't use it as an objective... Will making that group of mobs, the "boss" specifically drop a quest item needed to continue work? Or would that still make you require killing the other mobs with it?
I want to have a boss by himself but be an objective in some way, it doesn't look like there is a way to do that though. I still don't understand why they don't list single encounters for you to customize yourself.
