If you want to "consume" an item - you select "Remove Inventory Item" option. HOWEVER this option is only currently available in interactive objects - NOT dialogs. Perhaps request the option be added to dialogs?

This would be a great feature. I was just thinking of a scenario where you'd get a note, or something, off a dead body, and then later give it through dialogue to an NPC. It's not really essential that it be consumed, but it would be nice for roleplaying authenticity.
For those situations in which I desperately need to get rid of an inventory item in dialogue, I've rather clumsily had the NPC tell the player to put the item in a nearby box/bookshelf/chest/whatever, which can consume it. It's far from ideal though.
The biggest issue with dialogues consuming items in inventory is this: What happens if you consume the item but the player then aborts the dialogue somehow (for example by clicking Done or by being attacked)? You could suddenly be left with a quest that can't be completed.

interact option for objects have "remove required item" checkbox.
