So, that being said, you can do Protect Caravan 4 times in the same amount of time you can do the Gather quest once. And end up with:
400 Copper, 300 XP, 800 Diamonds, 160 Leadership XP. And this is far from the only quest that is completely out-of-whack compared to others. It's like they just assigned random time values to all of these. I haven't spent any time in the other crafting professions so I can't speak to those.

It's more efficient to do the shorter ones and regularly refresh them, but most people do things like going to sleep... at which point letting the longer ones run overnight would be more profitable.

Basically this.
If you can actively check up on the tasks you're running, the shorter ones will provide better rewards for your time spent. But if you for some reason (sleep, travel, work, whatever) can't access the game or gateway for an extended period of time, then the longer tasks will give you more.
