When I go to make a trade, I can only ante up items. But I see people saging all the time that they are selling goods for Gold and Diamonds. What system are they using to trade their currencies? Can anyone shed some light on the matter for me please.

Some people sell items for.. well Gold/Silver/Copper < You won't see this that often.
The real catch is Astral Diamonds. You get these through Leadership, Praying to your God, completing daily quests, participating in Events (those little bar things that are sticking out of your mini-map). You get them in the form of Rough Astral Diamonds, which you refine into Astral Diamonds via a little button located next to them. To find this button, open your Inventory (the i key), click the little gold pile, and viola! You'll see it.
Arrows and Blades do not have names on them.
They are addressed, "To whom it may concern.."

As for the OP, I unfortunately don't know that answer. I tried trading with my g/f, and didn't see anything related to AD or gold exchange. The only thing I can think of currently, would be to talk to someone about what you are selling. Once both sides agree to a price, place it on the auction house, and buy it off of there.
You can go up to someone, press the 'f' key, select 'Trade', and at the bottom there are monetary fields for Gold, Silver, and Copper. You type the number in whichever field that applies to your trade, then click 'OK' or some selection that denotes 'affirmative' (I forget exactly what it says).
When the person you're trading with puts his item/money into the right side of the trade window (His side), you then you click 'Trade' and it puts whatever money you selected into the trade window on the left side of the trade window. At this point you should have money in one side and an item in the other, unless you're just giving money away.
As an example, yesterday a friend of mine was short 4 gold for his mount. I did the above with 4 gold, clicked trade and on the left side of the window it said '4 gold'. On the right side of the window it was empty because I was giving it to him. If I had bought something, I wouldn't have clicked 'trade' until the item I wanted was in the right side of the screen. I'd have hovered over it with the cursor, made sure it was what I was trying to buy, and then clicked trade.

Ah thank you for responding about the gold swap. How does it work with AD? I see people are asking for items for an AD sale cost. Is this just the case of someone putting the item on AH and that person then buying it for the agreed price?

Hmmm.... Hubby and I are playing and we party up together. I see the TRADE option in the dropdown by highlighting his name and right clicking, or in the friend's list, alas, it is greyed out. Does this not work anymore? Am I doing something wrong? Level requirement? What's the trick?

I traded with a buddy of mine but I didn't right click anything. What I did was pointed my targeting cursor (in the middle of the screen) on his character right there in front of me and then pushed F. When I did that, the option to trade was there. Hope this helps, cheers!
Trade also requires you to be very close to your target (why everyone is suggesting use the F function to bring it up as it validates distances), which might be why the 'right click a teammate's name' function isn't working.
