I keep seeing these maps with single mobs, like the ogre grind maps and others. How exactly do people get certain mobs to be alone? I cant seem to get anything but multiple mob encounters.

There are definitely single mob encounters, I've used them. You'll need to look a the descriptions of each encounter to see.
I've never tried it, but I wonder if you place an encounter it will allow you to remove individual mobs on the detail screen, much like it lets you reskin individual mobs.
Well i found a single ogre encounter, and a couple others. But it wont let me change their appearance like it will if its a group encounter. Is there still a way to change it somewhere else?

After placing an encounter you can move individual mobs around. I'm not sure what the range limit is if there is one, but you can certainly isolate them this way, possibly even placing them in different rooms. I tested this in the editor by placing two encounters in a large room and spreading them out. In testing they do not have chain aggro, but I can't say for sure if it's that way in live. I've heard that the AI behaves slightly differently in live.
