I did not try it, but I think, it will be a problem. Why? Because you will be scaled down to lvl 70. When you cant do it now, you will most likely have more problems with a scaled down lvl 80 character.
Scenario 1, same gear: lvl 70: 100.000 stat points. lvl 80 100.000 stat points, scaled down to lvl 70: 50.000 stat points (50k is random, but you can see the point.
Scenario 2, new gear: If you started with bad gear, you might get a boost with new gear, that might compensate your losses due to the scaling down effect. With BIS gear, this might be another story, but with BIS gear lvl 70 still is not that difficult.
Chars: CW, DC, GF, GWF, HR and TR.

Well, if you level to 80, the level 70 content will be harder - in some cases much harder, as you will get scaled down, perhaps way down below what your stats were when you were level 70.
So, you might, or might not be able to complete some of the level 70 content that you still have to do. This is frankly because the design of the scaling is fundamentally flawed.
There are a few things you can do. At level 70 you currently earn Seals of the Crown (and if you have any Seals of the Brave, they can be converted to Seals of the Crown). You can use those seals to buy Barovian Lord armor, which is a big step up from the Vistani gear that most new lvl 70s have.
You should do the start of the Undermountain campaign, until you get to the gear chest. Most of the stuff there is useless, but you really need the companion gear. Also, as you level up by doing L70 content, you can get really cheap blue L72-L79 items that drop in the Runic HEs. They are selling for peanuts on the AH.
The levl 70-80 content in Undermountain is actually easier if you do not level up before starting it, though,
