In general the easiest class to play for the first time is The Great Weapon Fighter. Terrific Offence, solid Defence, plenty of Self Heals, even some limited Ranged abilities thrown in there. At Ranged, probably the Hunter Ranger, although Your Mileage May Vary there.

I'm a new player too and can't figure out how to use a potion. I posted here because I can't actually start a post yet.
On the lower right hand side you will see three open slots. Drag a Potion from your Inventory into one of these slotts. There will be a letter or number above this slott. Press that letter or number and the Potion will activate. Failing that, you can right click on the potion in your inventory and use it there. Hope this helps.

Potions go on your "utility belt" - a set of slots usually bottom middle of screen, I think they are normally tied to the keys 4, 5, and 6. You can drag potions or some devices from your inventory and drop them in those slots, then trigger them with the 4-5-6 keys.
For a good learning class, you can probably take any class you think you will enjoy playing, as the levelling content from 1-70 isn't really that hard in general. However, a Guardian Fighter or an Oathbound Paladin makes a sturdy and effective character to level/learn with.
I personally found even the squishiest character (Control Wizard) not very hard to level with, especially if you grab a decent Companion early on to help with the tanking... Man at Arms, Shield Maiden, Con Artist; even the Apprentice Healer is pretty decent and will keep your health up.
