As the title says, this quest (and, therefore, the related xbox one achievement) is not unlocking in the achievement section of the journal. I completed all the 6 hunts many times (both alone and in party). Each single quest ("Defeat ...") appears as "completed" inside the journal.
Like me, many other gamers have the same issue. Someone unlocked the achievement, randomly, reapeting and repeating the hunts. A couple of friends unlocked the achievement after killing Clawgraze for the umpteenth time...
I don't know if it is a problem linked to the quest/achievement or to Clawgraze.

    UPDATE: it seems that if you have killed all the 6 hunts and the achievement doesn't pop, you need to find the Clawgraze saddle (trading with friends or dropped by Clawgraze) and the achievement will pop!
