There isn't a "best roll" for a race. The stats you want are based on your class, and you'll want to make the main (shown in purple) stat as large as you possibly can. Each race, though, has a stat bonus available (you can start with +2 to two different stats).

If you're making a tank paladin (Oath of Protection, commonly referred to as "tankadin"), you'll probably want a load of CON to help your HP. Healing paladins (Oath of Devotion, also known as "healadins") are going to want one of the secondary stats.

Make a choice you're going to enjoy for the long haul. You will spend a lot of time looking at that character, doing race and class quest chains, and so on.

If you're only concern is min-maxing, then you want dragonborn for all 8 classes.
